How to be a HEALTHY COOK | |
As more research warns the danger of overcooking, an expert tells us how we can make mealtimes healthier with the right kitchen Know-How.
The Food Standards Agency (FSA) has recently started an activity to help people understand the danger of being exposed to acrylamide (丙烯酰胺), a possible cancer-causing chemical, while cooking at home. According to some scientific research, overcooking can cause cancer, so we should try to keep a golden yellow colour or lighter when frying, baking or roasting foods such as potatoes, root vegetables, and bread. “The risks of overcooking food are two-fold,” explains the expert. “Many nutrients (营养物) like some vitamins are damaged by heat and therefore cooking can destroy some of the goodness in certain foods such as fruit and vegetables. What’s worse, certain foods are believed to cause cancer when cooked.” | So, how can we cook up delicious meals without hurting health? |
SHOP SMARTER Although it is nearly impossible to completely avoid acrylamide, it’s worth knowing which products contain it. Acrylamide is a chemical that is produced when starchy (淀粉类) foods are heated to very high temperatures for longer periods and is found in a wide range of foods, including chips, cakes and bread. The expert explains, “There are no clear guidelines on the ‘safe’ level of acrylamide that a person can eat, so try to reduce eating it whenever possible instead of trying to completely get rid of it, which could be so hard.” The way we store our food can also increase acrylamide levels. The FSA advises keeping raw potatoes for frying in a dark, cool place at a temperature above 6°C instead of putting them in a fridge.
SPEED IT UP, SAFELY Microwaving is a convenient choice. It uses a small amount of water and cooks food from the inside out, allowing for a shorter cooking time. The expert suggests that if you’re short on time, microwaving can be a convenient way to cook food without damaging its nutrients. |
【1】How does acrylamide influence people’s health?
A.It has no known bad effects on people’s health.
B.It may increase the risk of getting cancer in humans.
C.It may cause serious health problems like heart attack.
D.The effects of acrylamide on human health are unclear.
【2】According to the expert, what bad effects does overcooking have?
A.Some nutrients and the goodness in certain foods are lost.
B.Overcooked foods usually taste terrible and smell bad.
C.Overcooked foods are believed to make people fatter.
D.It can destroy vitamins found in potatoes and meat.
【3】What happens when starchy foods are heated to very high temperatures?
A.They become much sweeter.
B.They become too hard to eat.
C.They have an orange colour.
D.They produce acrylamide.
【4】According to the passage, which is the best way to reduce acrylamide?
A.Heat food to high temperature in a short time.
B.Reduce taking foods heated for long periods.
C.Avoid microwaving though it is convenient.
D.Store food for frying in a fridge below 6°C.
25、When you cut your skin, you bleed (流血). If a person loses a lot of blood (血液), he will become ill and may die. Blood is very important. People have always known that. At one time, some people even drank blood to make them strong!
When doctors understand how blood goes around inside the body, they try ways of giving blood to people who need it. They take blood from healthy people and give it to people who need it. This is called "blood transfusion" (输血). The blood goes from the arm of a healthy person into the arm of a sick person.
But there are two problems. First, it does not always work. Sometimes people die when they have blood transfusion. Later, doctors find that we do not all have the same kind of blood. There are four groups---O, A, B and AB. We all have blood of one of these groups. They also find that they can give any kind of blood to people of group AB. But they find that they can only give A-group blood to A-group people and B-group blood to B-group people. I have O-group blood and the doctor told me that I could give blood to anyone else safely.
There is another problem. To give blood of the right kind, doctors have to find a person of the right blood group. Often they can not find a person in time. If they have a way to keep the blood until someone needs it, they can always have the right kind of blood available. At first they find they can keep it in bottles for fifteen to twenty days. They do this by making it very cold. Then they find how to keep it longer. In the end they find a way of keeping blood for a very long time. We call a place where we keep money a "bank".
We call a place where we keep blood a "blood bank". One day, when you grow up, you may decide to give blood to a "blood bank". In this way you may stop someone from dying. Or perhaps one day you may become ill. You may need blood. The "blood bank" will give it to you in time.
【1】From the passage, we learn that sometimes people die when they have blood transfusions because they ________.
A. are unhealthy people B. have lost a lot of blood
C. are not given the right kind of blood D. are AB-group people
【2】Which of the following is true?

B. keep different groups of blood as much as possible
C. make it easier to sell or buy blood
D. keep blood for more than twenty hundred years
【4】From the last paragraph of the passage, we learn that ________.
A. the writer thinks it's good to give blood to a "blood bank"
B. we may become ill if we give blood to a "blood bank"
C. many people died because they lost a lot of blood
D. blood is more important than money
26、What do you want to be when you grow up? Would you like to be a scientist or an artist? If you have siblings, the order in which you were born may affect your choice of jobs, The Independent reported. Family roles based on birth order can affect people’s behavior and shape their personalities.
A group of British scientists studied 500 people from 11 different career groups. They found that older children are more likely to become astronauts and scientists. NASA astronaut Neil Armstrong and British scientist Stephen Hawking were both the oldest children in their families. That’s probably because parents usually treat older children more strictly than younger children. This gives them a more disciplined personality.
The scientists also found that middle children are 30 percent more likely to become CEOs than their brothers and sisters. The scientists said that this could be because middle children need to do more to get attention from their parents. This makes them more competitive, flexible and good at communicating. Mark Zuckerberg, the founder of Facebook and Bill Gates, former CEO of Microsoft, are both good examples.
Younger children, on the other hand, tend to be the “softest”. They get attention by learning to pay attention to other people’s thoughts. This makes them sensitive to others’ feelings. Therefore, younger children are more likely to become musicians. German musician Johann Sebastian Bach and Austrian composer Wolfgang Amadeus Mozart were both the youngest children in their families.
The study results also suggested that the only child is more likely to become an artist. He gets full attention from his parents and is freer to develop himself. This makes him more creative and confident.
